Yield: 16 Energy Balls
Prep Time: 20 minutes, Total time: 20 minutes
1 cup raw almonds
2/3 cup pitted Medjool dates, tightly packed
2 tablespoons almond butter, peanut butter, or tahini
2 tablespoons or 2 packets New Greens Berry Greens Drink Mix
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
Pinch of sea salt
¼ cup hemp seeds or shredded coconut
1. Place the almonds in a food processor and process until finely ground.
2. Add the pitted dates, almond butter, New Greens Berry Greens Drink Mix, cinnamon, cardamom, and salt to the food processor. Process the mixture until it becomes smooth and well combined. Depending on the moisture of your dates, if the mixture is too dry and crumbly, you may need to add a small amount of water to help the balls hold together. Transfer the mixture to a bowl.
3. Take small portions of the mixture and form it into sixteen small balls. Rolling the mixture between your palms can help shape the balls evenly.
4. Place the hemp seeds in a small dish. Roll each energy ball in the hemp seeds until they are fully coated. Store in a glass container in the refrigerator for up to a week. Enjoy!
